Sancha Pérez works on a 100% Tintilla wine

The winery and olive mill from Conil, which has just launched a new bottling line, has harvested the typical Rota grape variety for the first time this year.

The organic winery and olive mill Sancha Pérez is producing a single-varietal Tintilla wine, a typical grape from Rota that wineries in Cádiz began to recover for winemaking only a few years ago (you can read a report about this topic here).

According to Ramón Iglesias, this grape was harvested for the first time in their vineyards, located between Conil and Vejer, and is now aging in barrels where it will remain for twelve months. This is a new project for a winery that ended the year by launching a bottling line to meet growing production demands, increasing from 800 bottles annually to 25,000.

The Palomino-Pedro Ximénez inaugurated the new machinery. This wine was introduced almost a year ago and, after a good reception (3,000 bottles sold out quickly), they decided to keep it in the winery’s product range. This time they have released 8,000 bottles of a white wine described as fresh and intense, with aromas of exotic fruits and floral notes.

A new vintage of the 2017 Petit Verdot Joven is also now available — 1,500 bottles of a wine with scents of red fruits, cocoa, and flowers, and a powerful yet fresh palate — as well as the Sauvignon Blanc, a white wine with floral, exotic, and mineral aromas. More about this winery here.
